This is a new product from Kankiku Meijo that uses the unfamiliar sake rice "Kenaizan".
This Kenaizan is a truly rare rice that is only used by two breweries in Japan, Miyaizumi Meijo and Kankiku Meijo, who brew Sharaku.
This is the first attempt at Aizan outside Hyogo Prefecture, which was born in Mima City, Tokushima Prefecture, with Aizan as its seed.
The concept of Kankiku Meijo's new product, which uses such precious Mt. Kenai, is to write down the chronicle of Mt. Kenai through this alcohol.
Since it's still sweaty during the day, I imagined the freshness and sharpness of pasteurization.
