This Junmai Daiginjo sake is made using meltwater from snow that accumulates on Mt. Kaikoma and is polished by granite, and specially grown rice grown at the same altitude as the brewery.

By incorporating the philosophy of slow-flowing water and aging it for a year at ice-temperature, it has a more mellow and beautiful flavor.
We pay careful attention to every detail, from the raw materials to the cultivation methods, to maximize the energy of the rice itself, which has a low yield.
Yumesansui is polished to 27% and aged in the winter for a year at -5°C, allowing the power of Hakushu's great outdoors and its rich flavor to spread in your mouth.
