・Founding and History
Founded in 1875 (Meiji 8). By 1895 (Meiji 28), we were brewing 1,700 koku, ranking among the top three breweries in the prefecture. Although we closed temporarily during the war, we have remained dedicated solely to sake brewing.
A major turning point came in 1988 (Showa 63) when Junichiro Aihara assumed the position of representative.
Driven by the desire to create sake that he himself would enjoy, he strictly prioritized "Quality First," transforming the brewery into a Ginjo-focused facility.
・The Origin of "Ugo no Tsuki"
The brewery’s signature sake, "Ugo no Tsuki" (Moon After Rain), was named by the second-generation owner, Itaru Aihara, after a short story title from the essay collection "Nature and Life," published in 1900 (Meiji 33) by novelist Roka Tokutomi.
"The moon shining brilliantly in the sky after the rain, illuminating its surroundings." This name represents the goal our brewers strive for: to create sake as clear and beautiful as that moon.
