Aoki Sake Brewery is located in Niigata Prefecture, one of the snowiest areas in Japan. Aoki Sake Brewery is located in the Uonuma region. Since its founding in 1717 , the brewery has been making sake continuously for 300 years. Aoki Sake Brewery's sake, such as "Kakurei," is produced using the various blessings of the snow country and the traditional techniques of Echigo Toji brewers. While most Niigata sakes are "light and dry," the brewery aims to brew "light and delicious" sake that retains the natural flavor of the sake rice, and is committed to passing on this flavor for the next 100 years.
