・About Nishioka Shuzoten
Founded in the mid-Edo period, in Tenmei 1 (1781) by Jinsuke Izutsuya I in Kure, Nakatosa Town, Kochi Prefecture, located in the central-western part of Kochi Prefecture.
The brewery has a history of about 239 years, now in its 9th generation.
They use groundwater springs and famous waters from the Shimanto River headwaters for brewing. They meticulously brew sake using sake rice such as Yamada Nishiki and sake rice naturally cultivated using traditional farming methods in the villages at the source of the Shimanto River.
In recent years, they have focused on brewing ginjo sake with their own toji (master brewer) and boast numerous awards in various competitions.
