White label that challenges the limits of brewery yeast!

It is a common belief in brewing that sake yeast weakens and dies when the alcohol content exceeds 18 degrees. However, Kinoshita Brewery brews sake with an alcohol content of over 20 degrees every year using natural brewing of pure rice sake.

Furthermore, once a year, this " white label version " is produced to test the limits of the fermentation power of the yeast that lives in the brewery .
Although it is dry, the umami flavor makes it not feel spicy, and it has a strangely gentle taste despite its incredible alcohol content.
