This is a kimoto Junmai sake made with Miyamanishiki rice brewed by the Tsukinowa Sake Brewery's brewers themselves, and was designed and brewed primarily by the brewers themselves.
It has a sour taste derived from the kimoto yeast and a rich umami flavor, but also has a sharp, deep flavor.
It pairs perfectly with strongly flavored dishes and is also perfect as hot sake.
From the Tsukinowa Sake Brewery official website : The first generation of the Yokozawa family, who was from Wakasa (present-day Fukui prefecture), ran a koji maker in the current location, but the history of Tsukinowa began in 1886 when the fourth generation Yokozawa, Tokuichi, was passionate about sake brewing and founded the sake brewery.
Since successive heads of the family have been involved in sake brewing, the current owner, Yokozawa Daizo (the 7th generation of the Yokozawa family), has been in charge of sake brewing as both head of the family and master brewer since 1991.
When we incorporated on November 1, 2005, Yokozawa Yuko became the head brewer and we are now brewing sake under a new system.
