This is a sweet potato shochu that has a deep aroma and flavor, as it is brewed by hand using the koji that is the foundation of shochu making.
The delicate koji is made by the brewers using their hands and five senses, without relying on machines, and the malt is carefully fermented in earthenware pots after adding sweet potatoes (Kogane Senkan) from Kagoshima Prefecture.
"Handmade shochu" is a type of sweet potato shochu that is made using a method that does not use temperature-controlling machines during the stage of cultivating the koji that forms the base of shochu, but instead involves the brewers cultivating the koji directly by hand in a wooden room called a koji room.
The brewery uses the traditional handmade method, using 220 Morofuda (lids) .
It has a deep richness and strong aroma, and you can also taste the soft sweetness of the potato.
Whether you mix it with hot or cold water, you can enjoy its rich, deep flavor.
