This potato shochu is made with 100 % acid-free yellow rice malt and is made possible by thorough temperature control by the brewers, including Ozono Toji from Okubo Brewery.
The sweet potato is Anno potato from Okuma, Kagoshima Prefecture, and the koji rice is Hinohikari, also from Okuma.
This baked sweet potato shochu is made from carefully selected Anno sweet potatoes that are roasted and then brewed.
After being prepared in a jar, it is further stored in a jar.
The sweetness of roasted sweet potato is mixed with the delicate and gorgeous aroma that can only be expressed with yellow koji, resulting in a unique aroma, taste, and sweetness.
