Akita Sake Komachi rice is polished to 60%, pressed, then bottled and pasteurized.
This is an autumn chilled sake that has been left to sit at low temperature for the entire summer.
This year's Taiheizan Hiyaoroshi has a sour taste derived from the kimoto yeast, and is a delight to the palate with its juicy flavor.
This Hiyaoroshi sake is brewed using the traditional Akita-style kimoto brewing method, and is luxuriously made using the no-pressure method, in which only the sake that drips through the sake is bottled without applying any pressure.
Please try it.
