In Kagoshima, as in other parts of Japan, sake brewing has been practiced since ancient times, but under the warm climate, high-quality sake was difficult to produce.
Around 1500, the technique of distilling moromi to make shochu was introduced and became established in Satsuma.
In Edo, Akune Shochu commanded higher prices than Nada sake. (Edo Kaimono Dokuan'nai, 1824, Bunsei 7)
At Kagoshima Shuzo Kurose Toji Densho Gura, located in Akune with a view of the East China Sea, brewers diligently make shochu daily, benefiting from the sea breeze and the yeast that has long resided in the brewery.
