[CareFit Farm Winery Kohaku POP 2023]

Natural, barrel-aged orange wine made from 100% Koshu grapes from their own vineyard in Katsunuma

This wine uses 100% Koshu grapes from trellised vineyards in the Toriihira and Hishiyama Kyuryo districts, and the Shimo-Iwasaki and Todoroki Hikawa districts of Katsunuma Town.

Similar to red wine, the juice, skins, and seeds are fermented together in tanks with wild yeast, without the addition of antioxidants, enzymes, nutrients, or fining agents. It is then aged unfiltered in stainless steel tanks and French oak barrels.

You can also detect spicy aromas from the barrel and notes of white peach.
It might be good to age it a little longer.

It pairs well with stir-fried pork or chicken, all types of Japanese cuisine, and Chinese dishes that are not too spicy.
