A dry white wine that is both fresh and tasty

Koshu grapes from contracted farmers are pressed using the whole bunch method, in which the grapes are slowly pressed whole bunches without being crushed or destemmed, in order to reduce astringency and obtain flavorful juice.
After fermentation, the beer is stored in tanks with the lees and then bottled unfiltered.

The deep yellow scent evokes the image of a hot, dry year, with notes of quince and yuzu ripening on the tree.
In the mouth, the rounded fruitiness reminiscent of honey apple and fine acidity form a dense texture that stretches and spreads with a dignified presence.
The astringency that is characteristic of Koshu leaves a clean and bright impression.

It goes well with wild vegetables, seasoned tofu and soba noodles, as well as tempura, pork cutlets and oily pasta.
