LIBROM's goal is "Italy" and this craft sake uses blood oranges.
The reason why blood orange was used as a secondary ingredient is that LIBROM's goal is to brew sake in Italy.
He had been thinking for a long time that he absolutely wanted to use blood oranges, which originate from Italy, his goal.
The blood oranges used are rare domestic blood oranges that have been cultivated for approximately 40 years at Kubota Farm in Noko, Fukuoka Prefecture.
Of the several varieties available, we use the Moro variety, which has the deepest red color, to create a craft sake with a beautiful orange color derived from blood oranges.
The master brewer Anami manually separates the skin and pulp of the blood oranges, blends the pulp into a smoothie-like consistency, and boils the skins before adding them to the mash to ferment.
With its refreshing acidity and sweetness, it goes well with Italian cuisine.
It goes especially well with salads made with olive oil and balsamic vinegar!
Since you can taste the added ingredients, we recommend drinking it with the tea mixed together.
Also, the flavor of the secondary ingredients tends to come out more clearly 2-3 days after opening than when you first open it!
After about a month, secondary fermentation will occur in the bottle and a slight amount of carbonation will occur, which may erupt when opening the bottle, so please be careful.
