This is Domaine Toi's second red wine.
The maceration period was 18 days, with the immersion period determined to bring out tannins from the seeds.
The wine was aged for 10 months in old barrels, with an emphasis on preserving the natural aromas of the grapes.
The primary aromas are of red fruits (redcurrant, raspberry, plum), with notes of violet, clove, and sandalwood.
The taste offers fresh acidity, voluminous fruitiness, and delicate tannins, blending together for a pleasant and long finish.
Domaine Toi utilizes Hokkaido's cool climate to practice cultivation without relying on pesticides or chemical fertilizers.
They conduct natural winemaking, respecting the inherent power of the grapes by using wild yeasts for spontaneous fermentation and minimizing the use of sulfites.
It is a small winery that honestly reflects the individuality of the land and the expression of each vintage.
