A gentle, hopeful red wine
Grapes carefully grown all over Japan, including Bordeaux varieties Merlot and Cabernet Sauvignon, as well as Japan's native Muscat Bailey A, are fermented at a brewery in Ashikaga using wild yeast and wild lactic acid bacteria.
The aroma features fruits such as raspberry, strawberry, and blueberry, a spicy green pepper flavor, and nuances of licorice and cocoa from barrel aging.
The attack is light and fresh, the tannins are very gentle and the taste is not harsh, and the acidity is medium, giving the wine a freshness.
You can enjoy a supple and well-balanced taste on the aftertaste.
Coco Farm Winery was established in the 1950s at the foot of a mountain vineyard.
The wine is made from 100% Japanese grapes, no herbicides or chemical fertilizers are used in the winery's fields, and fermentation in the winery is mainly done using natural wild yeast.
