An ultra-limited version of the hard-to-find sweet potato shochu "Yasuda"!
While regular Yasuda is a shochu made from 100% sweet potato using the Tsumugenji sweet potato, this is an ultra-limited version made from 100% Hamakomachi sweet potato, an orange sweet potato.
Kokubu Sake Brewery received a call from a contracted farmer saying that they had nowhere to put the "Hamakomachi" sweet potatoes they had harvested and were in trouble.
I have been interested in Hamakomachi potatoes for some time, and after speaking with Master Brewer Yasuda, I decided to release a limited edition version brewed using the same method as Yasuda.
Although not as high as regular Yasuda, it contains a very high amount of the compounds that lead to the unique fruity aroma of sweet potato shochu, and the amount of beta-damascenone, which is said to be characterized by a rose-like floral scent and a black tea-like scent, is nearly three times higher than regular Yasuda.
At the mash stage, the shochu had a very strong, grassy carrot-like aroma, and even after distillation, the carrot-like aroma and strong bitterness remained. However, by aging, the bitterness was reduced and a floral aroma began to emerge.
