Instead of the yellow koji normally used in sake brewing, white koji is used for the brewing process, and the yeast used is Association No. 77, an apple acid yeast.
This pure rice sake combines the refreshing citric acid from the white koji with the sweet and sour flavor of apple acid from the yeast.
