The highly popular "OKU THE MOON" series proudly presents its anticipated third installment.
This time, the theme is "Wakamizu," a sake rice from Aichi Prefecture.
This series is brewed by the 24-year-old 6th-generation brewery owner, Mr. Masaki Yamazaki, who aims to maximize the unique characteristics of each sake rice. While the previous Yamada Nishiki emphasized a balance of richness and acidity, this Wakamizu is crafted with lightness and freshness in mind, perfect for the hot season.
This year, they re-evaluated the super dry design of last year and tuned the sake to a slightly dry profile, aiming for consistency across the entire series.
Nevertheless, it remains the lightest and most approachable flavor in the series.
A refreshing aroma of La France pear, Muscat, and kiwi rises from the glass.
Additionally, a subtly fresh acidity reminiscent of pink grapefruit spreads pleasantly.
Upon tasting, a delicate carbonation unique to slightly activated sake, along with a soft and transparent umami, gently unfolds.
While offering a juicy fruitiness akin to biting into a La France pear, the carbonation and acidity expertly tie everything together, leading to an astonishingly smooth finish.
Without any bitterness or off-flavors, it naturally invites you to take another sip.
Despite the rich umami derived from origarami, it doesn't feel heavy, striking a perfect balance that encourages continuous drinking even in hot weather. This is a perfect summer sake, showing a particularly refreshing expression within the series.
