The long-awaited first vintage of Masako Azura, a noted wine grower who is responsible for the further evolution of Koshu wine.
We use Koshu grapes grown in the Amayahara field of a contracted farmer, which is well-drained along a river in the Kamoiji district of Yamanashi City.
It is fermented using wild yeast for two weeks at around 20℃ and then brewed using the Surlie method.
Pale lemon yellow color.
It has a floral aroma with citrus fruits reminiscent of lime and grapefruit, and fruit aromas such as white peach and pear.
Smooth on the palate, with a harmonious acidity and fruity flavors.
The juicy, umami and refreshing taste lingers in the aftertaste.

Cave an is a winery launched in 2022 by Masako Azura, a female brewer who was in charge of cultivation and brewing at Marufuji Winery, a long-established winery in Katsunuma, Yamanashi Prefecture.
The company cultivates Koshu, Petit Manseng, Albarigne, Tannat, Petit Verdot, and Marselan in six fields (approximately 1 ha) located at an altitude of approximately 400 meters in the mountains of the Manriki district of Yamanashi City, Yamanashi Prefecture.
Anzo is located in the mountains of the Manriki district of Yamanashi City, which is described as a landscape reminiscent of the famous wine fields of the Côte d'Or in the Burgundy region of France.We aim to create well-balanced, soft wines that reflect the terroir and go well with Japanese food. .
