No added antioxidants, no filtration, fermented with wild yeast

Made using 100% Muscat Bailey A from our own farm in Katsunuma, fermented with wild yeast and no antioxidants, and finished without filtration.

Harvested at a Brix level of 17.5 to 18 in a terraced field in the Hishiyama/Toriidaira Hills area.
A small amount of supplementary sugar is added to balance the wine.
The temperature during fermentation is left to the natural temperature, and the juice is squeezed after brewing for 12 days.
Aged for 6 months in stainless steel tanks.

A well-balanced wine with a pleasant strawberry aroma and fresh acidity.
It goes well with stews that use dashi stock, stews that use soy sauce, and dishes that use simply seasoned pork or chicken.
