[GRAPER EPUBLIC Bailey A 2021]

A red wine with an elegant taste that overflows with juicy fruit

Uses 95% Muscat Bailey A from Yamanashi Prefecture and 5% Cabernet Sauvignon from Yamagata Prefecture.

20% of Muscat Bailey A is laid on the bottom of the tank with whole bunches, and the remaining 80% is destemmed and placed on top of the whole bunches, macerated and carbonic at the bottom, then fermented with skins and pressed for 10 days.
Blended and bottled with a small amount of Cabernet Sauvignon in the summer of 2022. Aged in stainless steel tanks for about 10 months.

The scent is juicy and fruity, like a combination of freshly cut apples and strawberries. The taste is full of fruit, with a pleasant acidity and soft astringency, and a yeasty umami aftertaste.

*Maceration Carbonic is a brewing method in which grapes are placed in a tank with carbon dioxide and fermented without crushing them. It features a fresh scent and a deep color with little astringency.
