The sake rice we use, "Omachi," was born in Okayama Prefecture in 1859 .
It has large grains and a large shinpaku ( the pure white starchy center of the rice grain ) , and is known as the best sake rice.
Because it has excellent sake rice characteristics, it is used throughout the country as a hybrid for new varieties, and most sake rice varieties such as "Yamada Nishiki" and "Dewa Sansan" have this lineage.
This is truly the sake rice that has shaped the taste of modern sake.
Both the cultivation of rice and the brewing of sake are extremely difficult, but the sake produced is full of a unique, mellow, and gentle flavor.
This sake, Dewazakura Junmai Ginjo Omachi, is carefully and slowly aged, allowing you to enjoy the bold, full-bodied flavor unique to Omachi rice and the deep flavor that comes with aging.
