  This is a mellow, dry sake made by brewing a very dry Junmai Ginjo sake and then aging it for a year at low temperatures while still being raw.
 This unfiltered Junmai Ginjo sake is made using a quick fermentation process with Yamadanishiki grapes, and has an extremely dry sake meter value of +9, giving it an alcohol content of 17%.
 It has a rounded mouthfeel with no sharp edges, and while it has the full, rich flavor typical of Yamadanishiki, it also has a beautiful sharpness from the middle to the end.
 This is a mellow, dry sake that stands up to its sweetness even when raw aged.
