[Legame Method Classico Koshu 2019]

A dry Koshu sparkling wine that creates an elegant moment

Number produced: 1,163 .
An abundance of delicate, fine bubbles rise from the transparent straw-yellow exterior.
It has a refreshing scent of green apple with citrus aromas of grapefruit and lemon.
Additionally, the spicy aroma of Japanese pepper and the cracker-like aroma from aging add accents and complexity.

When you put it in your mouth, you will experience a dry impression and fine, gentle bubbles.
The aftertaste is a pleasantly sour yogurt-like acidity that goes down smoothly and is refreshing.

Fully ripe and moderately ripe Koshu are thoroughly chilled to 4°C before being crushed.
After allowing the juice to settle for a day, the supernatant is fermented at low temperature in separate stainless steel tanks.
After fermentation, the wine is blended, bottled and aged in the bottle for 12 months.
The loss during disgorgement is made up with Night Harvest Koshu from our own vineyards, and the wine is finished without dosage ( no added sugar ) .
