・Founding and history
Founded in 1875, the brewery produced 1,700 koku of rice in 1895, making it one of the top three sake breweries in the prefecture. Although the brewery temporarily closed due to the war, it continued to focus on sake brewing .
A major change occurred in 1988 when Junichiro Aihara became president.
Wanting to make delicious sake that he himself would drink, he puts "quality first" and has transformed into a ginjo brewery.
・Origin of "The Moon After the Rain"
The brewery's signature sake, "Ugo no Tsuki" (Moon After the Rain), was named by the second-generation owner, Aihara Itaru, after the title of a short story in an essay, "Nature and Life," published in 1900 by novelist Tokutomi Roka.
"In the sky after the rain, the moon shines brightly, illuminating everything around." This is the name that the brewers always aim for, as they want to brew such clear and beautiful sake.
