This mellow dry sake is made by fermenting extremely dry Junmai Ginjo sake and storing it in low temperature storage for a year.
Junmai Ginjo unfiltered unfiltered sake with an alcohol content of 17%, brewed using Yamada Nishiki speed brewing and extremely dry with a sake content of +9.
It has a rounded mouthfeel with rounded edges, showing the fullness typical of Yamada Nishiki, but with a very nice sharpness from the middle to the latter half.
It is a rich and dry sake that does not lose its sweetness even when aged raw.
