Rich fruitiness and umami, crisp acidity
The Delaware grapes are macerated for three weeks with whole bunches to bring out the flavor of the grapes, then aged in barrels (some large barrels and stainless steel barrels) for 12 months.
Bright orange amber.
Aromas of quince, dried apricot, grated apple and ginger.
While it has the crisp acidity typical of Yamagata, it also has the rich fruitiness and umami of ripe Delaware, with a lingering aftertaste that is slightly reminiscent of grain.
Sakai Winery was founded in 1892 and is the oldest winery in the Tohoku region.
Since around 2007, the company has switched from conventional farming methods to pesticide-free grape cultivation in its own fields, and uses around 20 sheep to graze the fields and remove weeds.
We make wine using natural yeast and microorganisms present in the land, and follow traditional methods such as the non-filter method that we have been using since the company was founded, to create wine that is rooted in the land.
