A deep flavor that evokes wabi-sabi

The elegant aroma of soba, reminiscent of fresh fruit.
After long-term aging, the bitterness characteristic of soba shochu has faded, resulting in a soft and pleasant taste.
This is an 8-year aged soba shochu masterpiece.

Several years ago, two friends and I went on a trip, and by chance, we were allowed to stay at a small temple.
That evening, the old monk who was the temple's master treated us to some very delicious soba shochu.
It had reached the height of maturity and was a masterpiece that subtly evoked wabi-sabi.
Now, I miss the old monk and the shochu, so I contacted the temple, but it no longer exists.
Recently, I had a drink with the same friend, and he also seemed to have a surprisingly strong impression of it.
By the way, we call that monk Soba Oshou.
