Made with Pinot Noir from our own vineyards.
Pinot Noir trees planted since our establishment, now 26 years old, were fermented with whole destemmed grapes using natural yeast, aged for 9 months in old barrels, and bottled with zero sulfite use.
Cave d'Occi Winery began experimenting with natural yeast in 2023, and one barrel made with natural yeast stood out with exceptional character even during barrel aging, so it was bottled individually.
The texture achieved in this challenging vintage of intense heat and drought truly brings out the charm of natural-style Pinot Noir.
Aromas of wild strawberries, violets, black cherries, roses, nuanced notes of a calm, sunlit forest and game, with the savory umami typical of natural wines. On the palate, intense umami and sweetness embrace pure fruit, extending deep into the throat with ample salinity.

While this wine has a powerful impact from the moment it's opened, it is a short-lived wine, perhaps due to its production method, showing signs of decline after about 3 hours and becoming muddled the next day. I understand this is a difficult request, but I strongly urge you to drink it from the bottle.
I have previously made my wines sulfite-free, but this instability was regrettable, so in 2024, I added a very small amount of sulfites at bottling.
This will likely be my first and last wine made with Pinot Noir from our own vineyards.
