A new type of sweet potato shochu with a refreshing minty sweetness!
Compared to the brewery's popular sweet potato shochu, Flamingo Orange , it does not have as strong a fruity aroma, but it does have a refreshing minty sweetness when you put it in your mouth.
While Flamingo Orange uses potato koji, this Cool Mint Green uses rice koji.
Furthermore, Toji Yasuda believes that the usual brewing method is not interesting, so he uses the " bowl brewing " method, in which koji, potatoes, and yeast are brewed at the same time to bring out the unique characteristics of the sake.
The Kagoshima Fragrance Yeast No. 1 they use tends to produce a high level of compounds that lead to banana-like aromas, but in the case of Flamingo Orange, which uses potato koji, the level was not so high. They thought that rice koji was necessary to enhance the aroma compounds, so they decided to try making potato shochu using rice koji and Kagoshima Fragrance Yeast No. 1 .
After distillation, it had a strong banana scent, but as it aged, the aroma gradually changed and a minty scent began to be detected.
