By cooling the unblended whiskey to -4°C to -5°C to remove the separated impurities, we are devising ways to retain as much of the umami component as possible without filtering.
Impurities have been removed from this sweet potato shochu, which is rumored to prevent hangovers.

It has a mellow aroma, sweetness, and umami unique to black koji, and is finished with a mellow flavor that is unique to stored sake.
Hot water and rock are recommended.
