Sweet potato shochu with a strong banana aroma!
Sunny Cream is an innovative sweet potato shochu created by Toji Yasuda of Kokubu Shuzo.
Toji Yasuda is responsible for the "Oki Kojigura," a brewing method that uses yellow koji and a high ratio of rice to perform reduced pressure distillation, as well as the industry's first shochu made from 100% sweet potatoes, Imo Koji Imo.
Another shochu he has created, Flamingo Orange, has also been very well received, but Sunny Cream is a further development of that idea.
When brewing another product, "Cool Mint Green," they detected strong banana and melon-like aromas even at the moromi stage, and thought that if they used the yellow koji brewing method, which has a higher proportion of rice, the aroma would be even stronger, so they began brewing this shochu.
The distinctive aroma is clearly noticeable from the mash stage, and the finished shochu has a higher level of isoamyl acetate, a component likened to the aroma of bananas and melons, than "Cool Mint Green."
To bring out its unique characteristics, it is released with a slightly higher alcohol content of 28%.
This is a new type of potato shochu with a very sweet aroma and a banana-like flavor.
