The commemorative first release in the "Mitsuteki" series, "the Sun," created by agricultural brewer Kentaro Yagi.
Beni Haruka sweet potatoes, grown in-house, are saccharified and aged for approximately four months, and by slowly evaporating their moisture, their sugar content is increased.
Through a unique production method that maximizes the natural sweetness of the sweet potato, we have achieved a rich and profound sake quality unlike anything before.
This work, brewed using a new method that re-examined everything from sweet potato storage to saccharification management, steaming processes, and brewing methods, truly marks the opening of Mr. Yagi's "KENDO SHOCHU WORLD."
Just as wine expresses the individuality of grapes, this new challenge aims to pursue the charm of each sweet potato variety in shochu.
