[Cave d'Occhi Kuma (Cabernet Sauvignon) 2023]

Charming yet somewhat mysterious, with a gentle flavor that seeps into your body.

Made using Cabernet Sauvignon from sandy soils grown on our own farm.

We use four different brewing methods: whole bunch, carbonic maceration, cold maceration, and a special method to activate the lactic acid bacteria before fermentation. Each method is brewed in a separate tank and then combined at the time of pressing.

It actively produces substances known as off-flavors, creating an irresistible taste for those who like it.
The nuances of MC, the blueness of the whole bunch, the blackness of reduction, the gorgeousness of acetic acid, the subtle sexiness of Brett, and the quality of the variety. Various elements intertwine, spreading from the glass to the mouth. The aftertaste gradually spreads.
