A natural Apassimento wine born from experimentation
The wine name Apassimento means shade drying. As the name suggests, it is an experimental wine made by brewing and fermenting grapes that have been dried in the shade and condensed.
Muscat Bailey A and Neo Muscat were harvested in the second half of September.
Muscat Bailey A is dried on the railing on the 2nd floor of the winery, which is a former gymnasium, and Neo Muscat is dried in the shade for two months on the rice straw of Mr. Yuki Sato, a rice creator in Kakuda City.
In the original plan, we planned to make it separately, but because the amount was too small, we mixed with Muscat Hamburg, which is also the same parent.
All the rotten fruits that came out during the shade drying are sorted, fermented in a tank for one month, and then squeezed with a basket press.
Once the rough cage is lowered, it is aged in barrels for one year before bottling. Released after 1 year of aging in bottle.
Even if you eat it now, of course it has a deep enough flavor, but to be honest, the depth of flavor will come out more if you let it rest for a while.
