This shochu is made by distilling the sake lees of the sake Dassai on the same day to remove the spirit.
Due to the manufacturing method, it is not possible to extract a large amount, but the beautiful aroma of Dassai is kept in the shochu.
The high alcohol content of 39% is to bring out the clean aroma at its best.
