Asahi rice is a common rice variety with little white core, but is highly suitable for sake brewing.
It is the root of Koshihikari and Sasanishiki, and is the only variety of rice on the market that has not been artificially bred.
It is called the phantom rice because it is difficult to cultivate due to its tall height, which makes it prone to falling over and its susceptibility to disease.
The rice is deliberately not polished, allowing the complex flavor of Asahi rice to emerge, while the mild acidity leaves a clean aftertaste.
