・The brewery was founded in the Edo period. Using the extremely soft water pumped from the Ryujin well dug inside the brewery, we brew our own unique sake with a flexible approach, led by our experienced chief brewers.
We strive to make sake that brings out the individuality of sake rice varieties such as Yamadanishiki, Omachi, Gohyakumangoku, and Aizan, aiming to produce a rich, delicious type of sake that allows you to taste the natural flavor of the rice.
What we focus on most is the traditional techniques unique to sake and the sensibilities of the people who use those techniques.
We believe that the important thing about "handmade" sake is not how much effort is put into it, but where and why the effort was put into it. While we continue to brew sake in the traditional way, we are always striving to make even better sake, incorporating new methods and innovations.
