Sauvignon Blanc from the northwest plot of their own vineyard is whole-bunch pressed and fermented in stainless steel tanks, then bottled using gravity flow.

Rita Farm & Winery is a small winery run by a husband and wife, the third to open in Yoichi, Hokkaido.
All of their varietal wines use 100% estate-grown grapes, and they practice natural fermentation with wild yeasts to pursue terroir.
They also transfer wine using only gravity to avoid stress, and use a gravity-fed bottling machine for bottling.
