Daina Karakuchi Choudaina Junmai Ginjo Hiire 720ml/1800ml
【Daina Karakuchi Chodaina Junmai Ginjo Hiire】
Dry and seductive.
The two previously released nama-zake (unpasteurized sake) were well-received not only by dry sake lovers but by many customers.
And now, the first hiire (pasteurized sake) in the series makes its debut. With the theme of "seductive dry sake," it expresses a different charm from the previous nama-zake.
Through low-temperature fermentation with aromatic yeast, we pursued a natural and elegant dry sake without forcing it to be dry.
The result is an "aromatic dry sake" with a subtle sweetness and華やかさ.
The tank used this time is different from the previous nama-zake, and a different individuality is expressed in the flavor.
From the glass rises a rich aroma reminiscent of yellow peaches and honeyed apples. A gorgeous and deep aroma spreads, unexpected for a dry sake.
Upon tasting, a velvety smooth mouthfeel slowly gives way to soft, rounded umami.
In contrast to the sharp acidity of the nama-zake, this one has a smooth, unhindered flow.
It allows you to enjoy the aroma and umami, then gently fades away with a pleasant aftertaste.
A mellow and elegant dry sake where aroma, umami, and crispness are beautifully harmonized.
This is a captivating bottle that we recommend not only to dry sake enthusiasts but also to those who don't usually choose dry sake.
