This imo shochu offers a direct taste of sweet potato, characterized by its remarkably crisp finish.
To preserve its unique character, it is deliberately not blended with aged shochu for flavor uniformity. Therefore, the brewing year (vintage) is indicated on the label. This is a pure imo shochu where you can genuinely taste the sweet potatoes harvested in that particular year.
Traditional imo shochu is made by sprinkling koji mold over steamed rice to create "rice koji," and then adding steamed sweet potatoes for fermentation.
"Imo Koji Imo" revolutionizes this conventional method by using local sweet potatoes instead of rice to make "sweet potato koji," resulting in a 100% sweet potato shochu.
While various breweries have started producing 100% sweet potato shochu in recent years, Kokubu Shuzo's Imo Koji Imo was the first 100% sweet potato shochu to be released in the industry in 1998.
It is, so to speak, the "originator of imo koji shochu."
