Kyoho-do 2025 Spring Release Rosé
Fermented and aged for approximately 4 months in barrels ranging from large to small, primarily using the Koshu grape variety prepared both as juice and through maceration.
Finally, Kyoho grapes that had been aged for 6 months in small barrels are blended in.
Pale cherry blossom color.
Refreshing aromas of green apple and lime, with delicate floral nuances reminiscent of melon and hawthorn. Furthermore, subtle hints of spice, like chili pepper, and butter intertwine, creating a deep and complex aroma.
The palate is soft, with expansive notes of coconut and spices like nutmeg. A slight effervescence dances lightly on the tongue, creating a pleasant rhythm.
The finish offers a gentle, lingering sweetness and spicy flavor, evocative of nutmeg.
Starting slightly chilled and gradually allowing it to warm to room temperature will reveal different facets of its character. Enjoying it slowly in a glass is also recommended.
This wine pairs well with everyday meat dishes. For pork, consider sautéed or shabu-shabu with mustard. It also complements tonkatsu nicely.
