Yasuda's New Sweet Potato Shochu, Created by Yasuda Toji of Flamingo Orange!
The primary mash is made using the Hinekoji (aged koji) method with black koji, while the secondary mash undergoes activated fermentation by suppressing temperature cooling. It is then atmospheric-distilled in an improved still.
It has aromas and sweetness reminiscent of Shine Muscat grapes and strawberry jam. When you take a sip, a light sweetness and refreshing fruitiness spread in a well-balanced manner.
The pleasant, light finish lingers, making it a shochu that pairs well as both an aperitif and with meals.
Recommended ways to drink it are on the rocks or with soda.
The brand name's origin, meaning "passion for the unknown," was chosen to reflect the desire to continue challenging conventional wisdom and venture into new, untrodden territory.
Furthermore, "kaiju" also represents Mr. Nobuhisa Yasuda, the Toji (master brewer) of Kokubu Shuzo, who continuously refines his skills, challenges new brewing methods, and maintains a fervent passion for shochu.
