A special sweet and sour Kamokin, brewed in a precious wooden vat
The strong apple impression in its taste, naming, and label caused many to misunderstand (?) it as "Is this an apple sake?" which led to the renewal of "Kamo Kinshu Woody Apple"!
It uses Yeast Association No. 77, a high malic acid producing yeast. It also uses a wooden vat that had been dormant at Konko Sake Brewery for over 20 years, and Omachi rice cultivated by the brewery staff.
The subtle aroma of the wooden vat, the sweetness upon tasting, and the sharp, brisk acidity that follows create an exquisite balance.
Malic acid is said to be "cold-tasty acid," meaning it tastes best when chilled. So, please enjoy it chilled with your meal during this hot and humid season.
