【Carefit Farm Winery Naked Ruby 2024】

Fermented with wild yeast, no added antioxidants, no acid adjustment, unfiltered

Made from 100% Muscat Bailey A grapes grown in our own vineyard in Katsunuma, fermented with wild yeast, and finished without added antioxidants, enzymes, nutrients, fining agents, chaptalization, or filtration.

Destemmed and crushed at 18.6°Brix, then macerated and fermented in stainless steel tanks for 23 days.
Afterwards, it was pressed, racked, aged in stainless steel tanks, racked a second time, and bottled the next day.

This wine has a strawberry-like aroma and a pleasant, balanced fresh acidity.
It pairs well with simmered dishes with dashi, simmered dishes seasoned with soy sauce, and simply seasoned pork or chicken dishes.
