Rich fruitiness and umami, with crisp acidity
Delaware grapes from the winery's own vineyard were macerated for three weeks as whole bunches to extract their umami, then stored for 12 months in barrels (some large barrels and stainless steel barrels).
Sparkling orange-tinted amber.
Aromas of quince, plum, apricot, Darjeeling, and roasted nuts.
Gradually, sweet aromas of honey and fragrant olive spread.
The palate is mellow, with the elegant, lingering acidity characteristic of Yamagata, while also offering the rich fruitiness and umami of ripe Delaware.
The moderate tannins from the maceration tighten the flavor. Do not chill too much, and if possible, enjoy the expanding umami with changes in temperature in a large glass.
Sakai Winery, established in 1892, is the oldest winery in the Tohoku region.
Around 2007, they transitioned from conventional farming to pesticide-free grape cultivation in their own vineyards, and about 20 sheep are pastured in the fields for weeding.
They produce wine using natural yeasts and microorganisms present in the land, and continue to use traditional methods such as the non-filter production method that has been used since their founding, without using a filter, creating wines deeply rooted in the land.
