Our brewery is located just west of Fujinomiya Sengen Taisha Shrine, the head shrine of all Sengen Shrines in Japan. The brewery is said to have been founded around 1820 (Bunsei era) by Shokichi Yamanaka from Hino-cho, Gamo-gun, Shiga Prefecture. We hear that sake brewing began in its current location in 1831 (Tenpo 2nd year).
The characteristics of our brewery are the gentle, slightly sweet sake quality due to the soft water of Mt. Fuji used for brewing, and the flavorful brewing methods such as "Yamahai-jikomi" and "Sainin-jikomi" passed down through generations of "Noto Toji" (master brewers). The total production is about 2500 koku (about 250,000 1.8-liter bottles), and the main rice varieties used are 1/3 Hyogo-grown Yamada Nishiki, as well as Miyama Nishiki from northern Nagano and Gohyakumangoku from Hokuriku. About 75% of our production, including Josen, is tokutei-meisho-shu (special designation sake).
