Brewed with sake-suitable rice polished to 60% or less, using groundwater from the southern foothills of Yatsugatake.
It has a mild aroma and a pleasant taste with a strong umami of rice. It pairs well with various dishes, whether Japanese, Western, or Chinese.
・From the official Tanizakura Brewery website
It is said that the taste of sake comes from the rice, the aroma from the yeast, and the mouthfeel from the water quality.
At Tanizakura, we mill all the rice used for brewing ourselves, starting from the brown rice. We then polish off approximately 40% (on average) of each grain to remove impurities that could lead to off-flavors in the sake. The water that gushes forth from our deep well is groundwater from the Yatsugatake Southern Foothills Plateau Spring Water Group. The skill of our brewers, combined with these blessed natural products, gives birth to Tanizakura's sake.
