Michishizuku, a sweet potato variety gaining attention as an alternative to Kogane Sengan, is brewed using black koji and Kagoshima No. 2 yeast, then aged in a clay pot in a stone cellar for approximately one year.
The distinct honey and black tea aroma of the Michishizuku sweet potato, followed by the sweet flavor of roasted sweet potato, spreads on the palate. The mellow smoothness, softened by the clay pot aging, results in a versatile shochu whose flavor remains consistent whether served with hot water, on the rocks, with cold water, or with soda, though it is particularly excellent with hot water.
